Some of our first spring crops harvested here in the NE are Rhubarb and Strawberries.  What better ingredients could you use to make a pie?!  I received a recipe via MaryJanesFarm.org for this awesome pie.  I suggest you give it a try!  I thought it was extra awesome that you make it in a cast-iron skillet, which I just happen to have.

I will also be trying the apple pie version. I think this is sooo cool!  I think it's about the best pie crust I have ever made too...we all know what a daunting task that can be!  Go on, give it a whirl!! :)

Who doesn't like food?  Here is where I would like to share some recipes and other food ideas.  We can dive into the crock-pot or lay out and bake in the oven...either way, it's all about the food and feeding the brood!

Recently I borrowed a book from the library,  The Amish Cook: Recollections and Recipes from an Old Order Amish Family, by Elizabeth Coblentz & Kevin Williams.  It was a nice book of stories and recipes.  I was looking for recipes that made big batches, so I thought and Amish cookbook would be a good place to look!  I did find some bigger brood recipes as well as normal sized ones. 
On a cold winter day, everyone feels cozier with a fresh batch of cookies to nibble on.  I copied this recipe from the book, a nice simple cookie recipe that the whole family enjoyed! 
Applesauce Cookies
2 c. flour                                                    1 egg
1 tsp. Baking soda                                     1 c. applesauce
¼ tsp. Salt                                                  1 c. old-fashioned oatmeal
1 tsp. Cinnamon                                        ½ c. chocolate chips
½ tsp. Nutmeg                                           ½ c. raisins
½ c. butter                                                 ½ c. nuts
½ c. sugar
½ c. packed brown sugar
Preheat your oven to 375 degrees F.  In a bowl, sift together the flour, soda, salt, cinnamon and nutmeg.  Set aside.  In another bowl, mix butter, sugars, and eggs.  Add applesauce, oatmeal, raisins, chips and nuts.  Add sifted ingredients and mix until smooth.  Drop onto cookie sheet by the tablespoon.  Bake for 10 minutes.  Let cool for 5 minutes on tray, then move to wire rack to cool.
